Nora Pouillon’s lovely restaurant, decorated with museum-quality Amish crib quilts, was certified as the first all-organic restaurant in the country. But long before that honor, chef-owner Pouillon steadfastly selected only the finest organic ingredients---many locally raised---and even fish from certified waters for this and her other restaurant, Asia Nora, in the West End. At Nora, organic ingredients run the gamut from greens to peppercorns to coffee. This approach appeals to many more than just vegetarians or granola types. A fashionable cross-section of Washingtonians show up for Pouillon’s greens, classy wines and such showy dishes as rack of lamb with Mission figs. The menu changes often and seasonally, but some of the favorites are the smoked trout tower as an appetizer, and signature entrées like rockfish and duck breast prepared a number of ways. A popular dessert is the soufflé cake with cappuccino ice cream---cranked on the premises, of course. Nora is a restaurant that celebrates the beauty of honest, seasonal ingredients prepared with passion and verve.
