Chef Nora Pouillon takes us into uncharted culinary territory with her serenely beautiful Asian restaurant, decorated in Thai colors and accented with Asian artifacts. The restaurant features interpretive Asian cooking---you’ll find a smattering of flavors from most of Asia---using all-organic ingredients. Of course, the menu undergoes seasonal variations. After a bumpy beginning, Pouillon and her staff have hit their stride, and you can count on enjoying her many creative dishes, from dumplings rich with gingery flavors to tuna tartare. Other dishes worth savoring are the Thai seafood stew and the sesame-crusted ahi with a wasabi potato purée. If available, select the jasmine tea and cardamom crème brûlée for dessert, although anything you pick will be unusual. If you blanch at the final bill, keep in mind that you’re paying for high-quality (all organic) ingredients and recipes from one of America’s outstanding chefs. Pouillon’s Nora restaurant in Dupont Circle became the nation’s first certified all-organic restaurant.
