A stylish French bistro with an American accent, Bis is the second restaurant of chef Jeffrey Buben, who also owns the Southern-inspired Vidalia. Set in the Hotel George on Capitol Hill, the three-level space features a zinc bar, a dining area with spacious leather booths and a glass-enclosed kitchen. Updated bistro classics, such as roasted eggplant flan timbale, veal stew with wild mushrooms, or grilled pork chops, underscore the kitchen’s approach to fine casual dining. Menu choices do change, but this gives devoted patrons a chance to experience more of Buben’s interpretive cooking. Don’t skip breakfasts here, try the favorites of guests and power types from the nearby Hill: eggs Benedict, eggs Florentine, waffles and high-class croissants.
